One perk of the school year ending is that I am currently at home with full access to my mother’s kitchen. What’s more, I have full access to real food. Gone are the days of stealing dining hall fruit and relying on oatmeal for sustenance: THERE IS REAL BREAD HERE. You don’t understand what a luxury bread is until you go away to uni and the closest thing to it are stale bagels at the dining hall. Obviously you could buy it, but why spend money on bread when you can spend it on pizza, which is essentially bread on steroids?
When I was younger, I used to hate sandwiches.
They were my lunch up until senior year of high school, whereupon I got Invisalign and convinced my mom that I didn’t need packed lunches anymore because taking out my retainer was too much of a hassle. I was finally freed from my breaded nightmare.
However, they say you don’t know a good thing till it’s gone, which I think is a saying made up in regards to sandwiches. In my current opinion, there is nothing better than a sandwich. There is so much you can do with them and so many gourmet options that the sandwich is now up there with steak in terms of fancy foods. And you are lying to yourself and all you deem holy if you say you don’t like grilled cheese. Everybody loves grilled cheese. It’s the Oprah of the sandwich family.
So, given my newfound access to a panini press and real food, I set out to pimp my grilled cheese.
The different cheeses add an element of luxury while the ham gives you protein. Figuring that every gourmet item includes some form of vegetation, I chopped up an apple and added that into the mix. So easy, but so so so good. I could eat these everyday, though I shouldn’t because I would like to live to see 40 and eating too much of these babies is bound to increase cholesterol by a lot.
But for now, that’s irrelevant. Give me grilled cheese or give me death.
APPLE HAM & CHEESE PANINI
You Will Need
- Your favourite crusty bread (I went for a whole wheat Tuscan bread but this would be fab with sourdough too)
- Sharp cheddar cheese
- Asiago cheese
- A red apple, sliced thinly
- Drizzle of honey
- Dijon Mustard
- Spread the mayo and mustard on either slice of bread to taste.
- Assemble your sandwich, pop in the panini maker and BOOM you’ve got yourself the holy grail of sandwiches. Enjoy.
