The Salad Series: Cran Walnut Bleu Cheese Salad

header imageSo if you’ve been a loyal follower of WhatKumquat (hi, Electra) then you can probably discern that I am not one of those people who passionately advocates for salads.

As in, I think the last time I uttered the words “oh, I’ll just have a salad for dinner, thanks” was probably 2007, and probably at the suggestion of my mother on one of her health kicks.

This kind of salad, however, is an exception to my rule. There are variations on this masterpiece (adding apple pieces, subbing warm goat cheese or pecorino for the bleu cheese, incorporating candied pecans) that are equally as delicious, making it the only salad I will order out and one of the best “healthy” things I make for myself on the reg. It’s a mix of sweet and savoury, and it’s simply ze best.

(This is what I use if I’m making one salad for myself; adjust accordingly!)

You Will Need

  • about a plateful (super scientific) of washed & dried arugula- can also sub spinach leaves or romaine or any form of a leaf that floats ya boat
  • 2 Tbsp chopped walnuts
  • 2 Tbsp dried cranberries
  • about 1/4 cup crumbled bleu cheese
  • 2 Tbsp honey
  • 1 Tbsp balsamic vinegar
  • 1,5-2 Tbsp olive oil
  • dash of salt

Directions

  1. Assemble your salad. I am assuming you know how to do this; if not, might I suggest checking out Yahoo Answers or the 4th grade?
  2. To make the vinaigrette: start with the honey as a base, then whisk in the vinegar to break it up. Add your oil and salt to taste, then voila! You’re done. Enjoy your foray into the world of health.

  5. there was a point not too long ago where i put dried cranberries and either walnuts or pecans in every salad i ate, whether they realistically belonged or not. that said, i’d love this!

    • I feel ya girl, dried cranberries and walnuts are my favourite. My next step is coming up with a cookie recipe that incorporates those two (definitely as healthy as a salad)
