The Salad Series: Arugula Salad for your Health


This is so basic, it’s not even a recipe.

But it’s my favourite healthy thing to eat, probably because it contains cheese and is therefore not 100% good for you. It’s perfect if you need something quick though, and as such has become a go-to.

It tastes best with arugula/rocket, but for some reason none of the three Sainsburys I extensively hunted through carry any suitable form of lettuce other than this weird green kale-like leaf.. not the best, but surprisingly not the worst either. You’ve gotta try this arugula salad.

Arugula, thoroughly washed
A lot of shaved parmigiano reggiano, and don’t even think about using that powdered store-bought disaster in a clear tin

equal parts olive oil and balsamic vinegar (for a single serving, about 1 Tbsp. of each)
1 tsp. fresh lemon juice
pinch of coarse sea salt

Sprinkle the cheese over your washed and dried arugula. Mix up your vinaigrette so it’s evenly combined, then pour over the top. Ta-DA, you’re basically Italian!!!
